This French fruit preserve is truly delicious, and should be put up in the month of June. To every pound of fruit take one pound of sugar. It requires no cooking at all, and is therefore easily made. Get the largest and soundest berries in the market. Pick two quarts and lay them in a new and perfectly clean two-gallon stone jar and cover with two pounds of the finest granulated sugar. Stone as many pounds of red, black, and white cherries as you wish to use, and add the same quantity of sugar. You may also use bananas, pineapples or oranges. Seed the latter carefully. Be sure to weigh all the fruit, and allow one pound of sugar to every additional pound of fruit. Pour over the fruit a pint of pure alcohol. Tie up the jar with thick paper, and in season add peaches, apricots, raspberries, blackberries, large, red currants; in fact, all kinds of fruit. Green-gages and purple and red plums also add both to looks and taste. Be sure to add the same amount of sugar as you do fruit, but no more alcohol. In the fall of the year pack in glass jars; looks very pretty. Keep it in a dry, cool place. There is always a surplus of juice, which makes excellent pudding sauce. Add a little water and thicken.

Prepare the mix according to the package (Rawleigh’s lemon dessert mix is a good choice because it’s smooth and creamy even though it’s nonfat), pour it into the pre-made pie crust, and then the only work you have to do is to whip the meringues.

Lemon cherry pie is a lemon pie you may not have tried yet, but it’s delicious. lemoncherry pie is made with a filling made from common ingredients that everyone usually has.

Mix all of the ingredients together and pour them into an unbaked pie shell. Bake for 35 minutes at 325 degrees.

Frozen lemon pie is the easiest lemon pie to make. All you need is one can of frozen lemonade concentrate, one tub of thawed Cool Whip, 1 can of sweetened condensed milk, and a graham cracker crust pie shell. Whip the lemonade, Cool Whip and condensed milk in the blender, pour into the pie crust, and freeze it. This lemon pie needs to be thawed for about 15 minutes before serving or it will be too hard to eat. You can also add one can of crushed pineapple to the mixture for a little added sweetness if the tartness is too much for you.

Lemon cherrycheesecake pie is a more involved recipe, but it makes for a delicious dessert. Basically, you do the same thing as for the frozen lemon pie, but add one cup of cottage cheese and one envelope of unflavored gelatin and cut down the lemonade concentrate to half a can. When the pie is frozen, top it with one can of cherry pie filling and you’ll have a delicious pie that tastes just like cheesecake.
